VEGE KIDNEY BEANS

(SERVES 5-6)


INGREDIENTS:



* 2 cups kidney beans, boiled
* 1 bundle bitter melon top leaves, removed young leaves, washed
* 3 cloves of garlic, finely minced
* 1 whole onion, pared, finely sliced
* 2 tablespoons vegetable cooking oil
* 3 cups of water
* salt to taste


PROCEDURE:



* Preheat the frying pan, add the cooking oil and saute the garlic and onion.
* Add the kidney beans and stir and pour the water, wait until it boils.
* Season it with salt and add the bitter melon top leaves, don’t stir and cover it.
* Wait until it boils again and stay away the frying fan from heat.
* Serve while hot with rice.

MORE TIPS:



* You can also add shrimp on the mixture aside from kidney beans.
* You can also use salted fish on sauting the kidney beans to enhance the flavor.
