KARE FIESTA FILIPINO

INGREDIENTS:


* 1 kilo of beef oxtail and beef tripe, cut into 1 ½”
* 3 cups of peanut butter
* 1/4cup of ground toasted rice
* 1/2cup of cooked bagoong alamang (anchovies)
* 2 onions, diced
* 1 head galic, minced
*4 tablespoon of atsuete oil
* 4 pieces of eggplant, sliced 1 inch thick
* 1 bundle pechay (bok choy) cut into 2 pieces
* 1 bundle of sitw (string beans) cut into 2” long
* 1 banana bud, cut similar to eggplant
* 8 cups of water
*Salt to taste

PROCEDURE:

* In a stock pot, boil beef, tripe and oxtail in water.
* Boil in stock until the meat is tender.
* Get a big pan or wok, heat atsuete oil or olive oil.
* Saute garlic, onions until golden brown.
* Then add the stock and all the ingridients except vegetable.
* Simmer for atleast 20 minutes.
* Add vegetable according to their texture.
* Serve hot with bagoong

MORE TIPS:

* Serve with hot chili
* Add more peanut butter to taste
