VEGE MILK FISH IN SOUR SOUP

(Good for 4-5 persons)

INGREDIENTS:

· 6 slices Milkfish,scaled and cleaned

· 2 tablespoons Butter

· 1 whole Onion, skinned, stripped in slice

· 1/2 Teaspoon Ground Black Pepper

· 3 pieces Eggplants, diagonally sliced

· 2 pieces medium Bitter Melon (Ampalaya), halved, seeded,sliced at least an inch thick

· 1 tablespoon salt

· 1 cup of water

PROCEDURE:

* Preheat the butter in a medium pan over a high heat.

* Saute Onion until golden brown.

*Add the milk fish. Do not stir. Cook for about 4 minutes.

* Pour water and add the Bitter melon, eggplant, black ground pepper and the salt. Cover and let it boil for a couple of minutes or until the vegetables were already cooked.

* Ready to serve.

MORE TIPS:

· Do not over cook the Bitter melon for it will add more bitter taste to your recipe or may affect the taste.

· You can also add more spices so that the substance spread out to the mixture.

· You can also use cooking oil as substitute to butter.

· You can also add finger pepper if you want to.
