(8-10 servings)


* 1 kilo pork (thigh), cut into small cubed

* 2 tablespoons brown sugar

* 3 tablespoons white vinegar

* 3 pieces bell pepper, halved, seeded, cleaned and finely chopped

* 1 can evaporated milk

* 1/2 kilo potatoes, skinned, sliced into small cubes

* 3 pieces medium carrots, skinned, sliced into small cubes

* 1 teaspoon ground black pepper

* 1 cup pineapple chunks

* 2 pieces whole onion, finely chopped

* 5 gloves of garlic, finely minced

* 1 cup of water

* salt to taste

* 1/4 cup cooking oil


* In a clean frying pan, saute garlic and onion over a medium heat, cook until golden brown.

* Add the pork and continue stirring.

* Pour the evaporated milk and wait until it boils.

* Sprinkle with black ground pepper and salt to taste.

* Add the potatoes and carrots, cover and let it boil for a couple of minutes or until the vegetables soften.

* Add the bell pepper, pineapple chunks and water to the mixture. Cook for another minute.

* Add the vinegar and brown sugar, stir. Wait for another 1 minute and turn off the heat.

* Transfer to a serving plate and ready to serve.


* You can use ground pork if you want your recipe to be tinier.

* If you want your recipe to be creamy, you can use coconut cream instead of evaporated milk.

* Best to serve with hot rice.

* You can add chili powder if you want your food to be spicy.
